Breakfast in Bed with Little Island Studios

Hello Company Store readers, my name is Nicki over from little island studios, a blog I started years ago to share my family travel, food, and style, which I love more every day! Eating and sleeping clean are everything to me. And for me, the ultimate luxury is breakfast in bed for no reason at all other than it makes me blissfully happy. Reading on a fluffy white comforter that could otherwise be mistaken for a cloud and drinking my organic, fair trade coffee is my idea of luxury! This breakfast sandwich is proof that food can be both healthy and absolutely delicious!

Tips to treating yourself to a spectacular organic breakfast –

Start with making your bed the coziest you can with organic and soft fluffy comforters, blankets, and pillows.

Make a simple but elegant breakfast. Get out the beautiful dishes that you use for special occasions.

Use the best ingredients you can, knowing that what you feed your body makes all the difference. Plus, add fresh organic berries to any breakfast!

Add great coffee that is free from pesticides and fair trade.

These are ingredients for one piece of toast. When making your own, factor in how many people you are serving.

Balsamic Egg Toasties

Ingredients:

Pasture Raised Egg

Rye bread

Pasture Raised Bacon – 2 pieces per sandwich

Grass Fed Cheddar cheese

Goat cheese

Micro Greens

Red Onion

Avocado

Fresh Pepper

Sea Salt

Olive Oil

Balsamic Vinegar

Cook:

Slice onion thinly.

Slice avocado.

Shred a bit of cheddar cheese. We use about two tablespoons per sandwich.

Bake the bacon in the oven at 350 degrees until cooked. I use unbleached parchment paper to cut down on mess.

Toast a freshly cut piece of rye bread. When toasted and still hot, spread one heaping tablespoon of goat cheese on top. Add two bacon slices on top of goat cheese.

Add sliced onion, avocado, and greens.

Heat skillet to medium heat.

Add about one tablespoon of olive oil. When hot, add in a dash of balsamic vinegar and crack an egg on top of the oil / vinegar mix.

Fry the egg until the white is cooked.

Add egg on top of other ingredients.

Sprinkle with sea salt and pepper.

Add fresh raspberries or blackberries on the side.

Grab a book and jump back in bed or treat someone with a delectable and nutritious breakfast that is sure to start the day, or even week off right!
